I have a question about Seitan. You gave me several recipes a while ago which I have made and by the way, very declious! I am wondering if seitan can be made with something other than wheat gluten. I was at a very nice, small, health food store not too long ago and they did not carry wheat gluten. I was surprised and they said people try to stay away from it and find it not that healthy. Is this true? If so, can I make seitan out of something else? Thanks Chef Deb for all of your help!
