This is especially nice topped with fruit...


Creamy Cottage Cheeze

1 package very fresh silken tofu (firm)
1/2 cup soy sour cream or soy yogurt
1/4 tsp agave nectar or other sweetener
Small pinch of salt (optional)

In a bowl, break tofu into curd-sized bits.
Add soy sour cream or yogurt and remaining
ingredients and mix gently until well-blended.
Chill thoroughly. Keep refrigerated.

Use anywhere in place of cottage cheese.
