Hi Libby! Substituting butter for shortening would NOT make bad biscuits -- In fact, they would be very good. Let butter stand at room temperature until it can be whipped smooth, then whip it until smooth and slightly fluffy. Use in place of shortening in same quantity as given for shortening in recipe. Let me know how it goes!
