Several years ago, I was able to buy a Passover muffin mix but I haven't seen this in stores lately. All I see are mixes for sugary cakes (which I've bought, but I'd also like some not-so-sweet muffins). There's a muffin recipe on the box of quinoa flakes, but it needs some tweeking to make it "pesadich" because it has leavening. Or maybe you have a Passover muffin recipe of your own.
These are the ingredients for the quinoa muffins:
1/2 cup quinoa flour
1/2 cup quinoa flakes
2 tbsp honey
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 very ripe bananas
2 eggs
Preheat oven to 400 degrees. Mix flour & flakes with dry ingredients. In separate bowl, mix together bananas, eggs & honey & add to dry ingredients. Pour into greased muffin tins & bake 20-25 minutes at 400 degrees.
I'm not vegan so I don't need an egg sub. What I do need is a sub for the baking powder & baking soda, as well as for the quinoa flour (which I've never seen in any store). I have matzo meal and I can easily buy passover cake meal. Thanks for any help you can give.
