Banana Paste
1/2 cup water
1 Tbs sugar
1 Tbs lemon juice
3 ripe bananas, peeled
Put water, sugar, and lemon juice into a saucepan.
Bring to boil.
Add bananas and cook on medium-low heat for 10
minutes, stirring often, and adding a bit
more water if it gets too dry.
Cool, and mash.

African-Style Chili Sauce
1 tsp coriander seeds
2 tsp cumin seeds
3 cloves of garlic, peeled and chopped
6 green chilies (stems removed), chopped
1/2 cup fresh parsley
1/2 tsp salt
3 - 4 Tbs olive oil
In a dry frying pan over medium heat, toast
coriander seeds and cumin seeds, stirring
constantly. Let cool.
In a food processor, put toasted seeds, garlic,
salt, and chilies.
Grind all to a paste.
Put paste into a small bowl.
Drizzle with olive oil. Mix gently.
