I'm looking for a vegan white bean veggie burger recipe. I found a recipe for Emeril's white bean veggie burgers, but it calls for 1 egg plus egg yolk. How can I replace this? Should I try silken tofu (firm or extra firm? and how much?) or just omit the egg part altogether and add more breadcrumbs to make it hold together?
