I was curious if this would work, so I tried it.
Silken or soft tofu sauteed in a little olive oil over medium heat. The tofu may crust, which I like, and it does seem to come out so much like a "fried" egg.
Use a spoon to place the proper amount of tofu in the skillet -- to look as much like an egg as you want.
I'm not sure I'd want it to taste like an egg and have not tried using black salt (sulfur / "egg" flavor), but I was very satisfied with the results.
Herbs / spices can of course be sprinkled over the tofu as it cooks.
I placed the cooked tofu over whole grain toast and put a sauce over that.
Might make a good Eggs Benedict.
