Baked Beans 2 lbs small white beans 1 large onion, peeled and chopped 1/4 cup bakon bits or Tempeh bakon 1/3 cup brown sugar 2 Tbs mild molasses 1/4 cup ketchup 1/4 tsp garlic powder 1/8 tsp mustard (optional) Salt and pepper to taste Soak beans overnight (in fridge). Drain and rinse. Put in a pot with water to cover + 1". Bring to a boil. Boil for 10 minutes, skimming off any scum that forms. Reduce heat to medium simmer. Simmer, covered, for 1 hour. Drain and rinse. Preheat oven to 300 F. Mix onion, bakon bits, brown sugar, molasses, ketchup, garlic powder, and mustard into the beans. Put bean mixture into a greased casserole. Cover casserole. Bake for about 1 - 1 & 1/2 hours, or until beans are very tender, adding a little water as needed to keep beans from drying out. Add salt and pepper to taste just before serving. --- VARIATION: BBQ Baked Beans Use BBQ sauce in place of ketchup. --- QUICK METHOD: Use canned beans, proceeding from "Mix onion, bakon bits," etc.
