Check health food stores for amazake, or do a search for "buy amazake", or make a substitute: 1 cup well-cooked sweet brown rice 1/2 cup water (or more) 1/4 cup rice syrup or agave syrup (nectar) Blend in blender until smooth. Add water to desired consistency. Refrigerate. Shake before each use. --- NOTE: For many casserole dishes, rice milk -- plain or sweetened -- would make a reasonable substitute.
