You can sub some of this for
half the oil in any salad dressing:


Fat-Free Oil Substitute for Dressings

1/4 tsp xanthan gum or guar gum
1/4 cup warm water
3/4 cup room temperature water

Put xanthan gum or guar gum in a blender or
Add warm water. Blend until xanthan gum is
Add room temperature water. Blend until smooth.
Add remaining dressing ingredients of your choice.
Blend until smooth.

in the baking section of health food stores,
and in the health food section of some
