You can sub some of this for half the oil in any salad dressing: --- Fat-Free Oil Substitute for Dressings 1/4 tsp xanthan gum or guar gum 1/4 cup warm water 3/4 cup room temperature water Put xanthan gum or guar gum in a blender or processor. Add warm water. Blend until xanthan gum is dissolved. Add room temperature water. Blend until smooth. Add remaining dressing ingredients of your choice. Blend until smooth. NOTE: You can find xanthan gum and guar gum in the baking section of health food stores, and in the health food section of some supermarkets.
