Sure, you can sub pureed fruit for honey in many bread recipes, but expect it to taste different! If the fruit isn't very sweet, it would be prudent to add a little sugar to aid the rising. --- A recipe to play around with... --- Whole Wheat Bread 2 & 1/2 cups warm water 2 packets baking yeast 3 cups whole wheat flour 1/2 cup agave nectar or other sweetener 1/4 cup veg oil 1/4 cup 'milk (soy, rice, almond, etc) 3 to 4 cups additional flour 1 tsp salt Mix water, yeast and 1 Tbs agave in large bowl. Add 3 cups of wheat flour and mix well. Cover bowl with a towel, and put in a warm place. Let stand for at least 30 minutes, or longer. Add rest of agave nectar, oil, 'milk, and salt. Mix together. Begin adding remaining flour, 1/2 cup at a time. You may not be able to add all of the flour. Knead for 5 to 10 minutes until it is smooth and elastic. Cut dough into two equal parts. Shape them into loaves, and put into two greased bread pans. Cover pans with towels. Let stand in a warm place until they double in size. This will take up to an hour and a half. Bake loaves in preheated 350 F oven for 35 - 40 minutes.
