Subject:         Spicy Black Bean Soup

Spicy Black Bean Soup

1 tsp margarine or oil
2 cans black beans, including liquid
1/3 cup chopped onion
1 bell pepper, seeded and diced
1 can Ro-Tel Tomatoes & Chilies, including liquid
1 garlic clove, minced
1 can coconut milk
Hot sauce (opt)
Salt

Heat margarine or oil in frying pan.
Saute` onion until it begins to soften.
Add garlic, and saute` about 1 minute.
Add diced pepper, and saute` 3 minutes.
Add tomatoes, beans, and coconut milk.
Dilute with water to desired consistency.
Heat, stirring frequently, until all is hot.
Add hot sauce and salt to taste.
