Put 1 cup unseasoned, cooked rice in a food processor or blender, along with 1/4 cup water. Blend until as smooth as yogurt, adding a bit more water, if needed, to get the proper consistency of yogurt. Add some lemon juice or vinegar, a few drops at a time, and blend, until it has the sourness of yogurt. Store in fridge, and use in recipes in place of yogurt. Use within 3 days.
