My fave is cut about a pound of them in half, and put in a steamer basket with a peeled sweet potato cut into chunks and steam for a few minutes. Put in a baking dish and toss with 1/4 - 1/3 cup of maple syrup and 1/2 cup chopped pecans. Bake for about 20 minutes or till veggies are softened. You can saute an onion and toss that in before baking too. If it gets dry, add a bit of water.
