Sweet & Sour Sauce I 1/2 cup peach or apricot preserves 1/4 cup apple cider vinegar 2 cups water Pinch of salt (opt) 1/8 tsp garlic powder 1 Tbs cornstarch Combine all in a food processor or blender, and puree until smooth. Pour mixture into a saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Turn heat to low. Cook, stirring constantly, until thickened. Remove from heat. If mixture is too thick, thin with water to desired consistency. To increase 'sour' flavor, add a little more vinegar. ---- Sweet & Sour Sauce II 1 cup water 1 cup pineapple juice (canned) 1/2 cup brown sugar 1/4 cup rice vinegar 1 Tbs ketchup Pinch of salt (opt) 1 Tbs cornstarch Mix cornstarch with 1/2 cup of the water. Mix the rest of the water, juice, vinegar, sugar, ketchup, and salt in a saucepan. Stir in cornstarch mixture. Cook over medium heat, stirring constantly, until sauce is thickened and translucent. Remove pan from heat. Taste sauce, adding more vinegar or sugar if needed, to obtain the sweet-sour balance you like.
