I know that going vegetarian is gentle on the wallet and I've been working on a menu plan this week. I want to keep my menu at right around $50 for the week for 3 people. I'm looking for some meal ideas that aren't loaded with pasta, wheat, bread and not much else but I'm failing :(. So far this is what I have...
Breakfast Meals
Smoothies (all homemade)
Pancakes
French Toast
Biscuits
Hot rice
Toast and jelly with orange juice
Oatmeal pancakes
Maybe tossing in some fruit to make it a little healthier would work? I have all the stuff to make these that is why I picked them.
Lunches
I'm a little at a loss here.
Sandwiches (of course, because I have biscuits and homemade bread)
Soups, like veggies soup
fruits
some raw veggies
Beans tortillas
Stewed tomatoes and salad
Dinner is my biggest trouble spot
Noodles with veggies "stir fry"
Black bean soup with carrots
and that's pretty much all I can come up with. I can't afford meat (thank goodness) and only one person in the house eats it anyway. So now I am trying to make it up to him for not having meat by making the vegetarian dishes seem so much better. But I am on a strict budget and I can't think of cheap meals. The things I have listed is what I have in the house so my $50 will go a little further.
Any ideas? Any suggestions? We're on a strict budget and I can't do much with it.
