Baked Potato Skins Cooking spray 1/3 cup plain dry breadcrumbs 1 tsp chili powder (or other seasoning, like curry powder, Mrs. Dash, Vegit, etc) 1/2 tsp ground cumin 1/2 tsp salt 4 baking potatoes (about 8 oz each), baked and cooled 1/4 cup nondairy mayonnaise Toppings: Soy sour cream, shredded soy cheeze, salsa Heat oven to 400 F. Coat a cookie sheet with cooking spray. Mix breadcrumbs, seasonings, and salt on waxed paper. Cut baked potatoes in quarters lengthwise. Scoop out pulp, leaving 1/4"-thick shells. Reserve pulp for other uses. Brush shells with mayonnaise, then coat in crumb mixture. Put on cookie sheet. Bake for 20 minutes. Turn over, and bake 20 minutes longer, or until crisp. Serve with toppings of your choice. Some Toppings (mix & match):
Soy sour cream Shredded carrot Soy bakon bits Guacamole Nondairy cheeze Whipped tofu Soy mayo Chopped nuts Raw or cooked greens Refried beans Pizza sauce Gravy
