Subject:         good vegan burger

Garden-type Black Bean Burgers

1/4 cup boiling water
2 Tbs cracked wheat
1 cup onion, diced
1/2 cup water
1/2 cup rolled oats (quick oats)
1 cup cooked black beans, slightly mashed
1/2 cup corn
1/2 a red bell pepper, finely minced
1/2 tsp salt
1/2 tsp garlic powder
Dash of pepper
1/8 tsp cayenne
2 Tbs cornstarch
Olive oil cooking spray

In a bowl, mix cracked wheat and boiling water.
Let stand 1 hour (will double
in size).
Steam onion 10 minutes, or until pieces are
translucent. Remove from steamer.
Set aside.
Steam bell pepper until soft. Remove from
steamer. Drain well. Set aside.
Add 1/2 cup water to the oats and let them soak
about 10 minutes, until soft.
Drain any excess water from the wheat and oats.
Combine the grains with the spices in a food
processor.
Pulse 4 - 5 times until ingredients are chopped
fine, but not pureed.
Pour the mixture into a bowl with the beans, corn,
pepper, onion, and
cornstarch, and mix well.
Preheat oven to 300 F, and set a large skillet
over medium-low heat.
Spray the skillet with olive oil cooking spray.
Form 1/2 cupfuls of mixture into patties about
1/2" thick.
Cook patties in batches for 2 - 4 minutes per
side, or until light brown on
surface.
Transfer cooked patties to a lightly sprayed
baking sheet.
When all of the patties have been cooked in the
skillet and transferred to the
baking sheet,
bake 20 - 25 minutes in the oven, turning them
over after 12 minutes.

Wrap individually, and freeze.

Reheat in microwave, greased pan, or oven, until
just hot.

Tempeh Burgers

1 package tempeh
1/2 cup BBQ sauce (any variety)
1 Tbs steak sauce (A-1 type)
1 tsp minced garlic
1 tsp minced onion

Cut tempeh into 2 pieces.
Mix BBQ sauce, garlic, and onion.
Marinate tempeh in the mixture for 1 hour (in
fridge).
Grill or broil until browned.

Vegetable Burgers

1 cup cooked basmati rice (cold)
1 carrot, shredded fine
4 mushrooms, minced
1/2 small onion, peeled and minced
1 clove garlic, peeled and minced
Salt and pepper
1 tsp mixed herbs (your choice)
1/2 tsp vegetable bouillon powder
Breadcrumbs (as needed)
Oil

In a bowl, put rice.
Add carrot, mushroom, onion, garlic, salt, pepper,
and herbs, and mix well.
Add sufficient breadcrumbs to obtain a mixture
that can
be formed into patties that will stay together
(not too dry or too wet).
Form into patties.
Fry in sprayed pan until browned and hot
throughout.
Serve as desired.

Any unused/leftover patties can be wrapped and
frozen.
Cook from frozen; heat gently until hot
throughout.


NOTE:
For a different flavor, saute` the onion, garlic,
carrot, and mushrooms
in a sprayed pan or a small amount of oil until
vegetables soften slightly.
Add to rest of ingredients, and continue with
recipe.
