DEB'S HUMMUS ASSORTMENT
Hummus
1 can chick peas, drained, mashed and whipped
1/2 cup tahini (sesame paste)
1 - 3 Tbs olive oil (opt)
1 -3 Tbs smoked sesame oil (opt)
1 Tbs pressed garlic (or more, to taste)
1 tsp lemon juice
Chopped cilantro to taste (opt)
Chopped oregano to taste (opt)
Mix all; Chill.
Serve with pita triangles or crackers.
TIP:
For more "kick", add hot sauce or minced hot
peppers to taste.

Black Bean Hummus
In above recipe, use 1 can black beans (or 1 & 1/2
cups cooked), drained, mashed
and whipped.

Red Pepper Hummus
1 can chickpeas, rinsed and drained, or 1 & 1/2
cups cooked chickpeas
4 -oz jar roasted red peppers, drained
3 Tbs lemon juice
2 Tbs tahini
2 garlic cloves, peeled and minced
1/4 tsp ground cumin
Salt to taste
1 Tbs chopped fresh parsley or 1 tsp dried
Pinch of fresh or dried mint
In a food processor, combine all ingredients
except parsley and mint.
Process to a smooth or chunky paste (whichever you
prefer).
Scrape down the sides of the bowl once or twice.
Transfer to a bowl,and refrigerate for at least 1
hour.
Serve at room temperature, sprinkled with parsley
and mint.

Soybean Hummus
1 can soybeans (or 1 & 1/2 cups cooked), drained,
mashed, and whipped
1/2 cup tahini (sesame paste)
1 - 3 Tbs olive oil
1 - 3 tsp smoked sesame oil (opt)
1 Tbs pressed fresh garlic (or 1 tsp garlic
granules)
1 tsp lemon juice (or to taste)
Chopped cilantro to taste (opt)
Chopped oregano to taste (opt)
Mix all ingredients thoroughly.
Chill.
Serve with pita triangles or crackers.

Spinach Hummus
1 can chick peas, drained, mashed and whipped (or
1 & 1/2 cups home-cooked)
1/2 cup tahini (sesame paste)
1 - 3 Tbs olive oil (opt)
1 -3 Tbs smoked sesame oil (opt)
1 Tbs pressed garlic (or more, to taste)
1 - 2 tsp lemon juice
1/4 cup chopped cilantro
1/3 cup frozen chopped spinach, thawed and
well-drained
Put all in processor or blender. Blend until
creamy or almost creamy.
Chill.
Serve with pita bread, other bread, or crackers.

Artichoke Hummus
In above recipe, substitute mashed, canned
artichoke hearts for the spinach.
----
Avocado Hummus
In above recipe, substitute mashed, fresh avocado
for the spinach.
