Whipped coconut cream is a bit "finicky", so might not be firm enough for this use. (Although as a topping for fruit or pie it is quite marvelous!) --- Your ice cream idea sounds great! Be sure to keep the cake frozen until just before serving. --- You can use any chocolate cake for the "log", and fill with a white frosting, and dust the "log" with powdered sugar for "snow".
