Hi Deb, I'm trying to come up with a creative vegan dessert for Christmas. I wanted to try making a vegan buche de noel, and I was thinking of trying a homemade vegan whipped coconut cream for the filling. Do you think that would work well as long as I keep it refrigerated? Do you know if it would go solid in the refrigerator and to liquid if left out? If that won't work I might try filling it with some homemade vegan peppermint stick ice cream, and topping it with a ganache, keeping it in the freezer until just before serving it. Which do you think would work better? Also, for the cake, can I just use any cake recipe that would fit into a 9x13 cake pan? Happy holidays and thank you for your help! Erin
