Have you tried white wheat flour? It is a whole-grain wheat flour, but is lighter both in color and flavor. For results similar to those using regular white flour, mix it with a portion of unbleached white flour or white spelt flour. King Arthur Flour is one source of white wheat flour (and other good flours.)
