Pasta flour is durum flour, a high-protein flour.
If you can't find it or don't want to
bother looking for it, use all-purpose flour.

Eggless Noodles
2 cups durum flour or all-purpose flour
1/2 cup whole wheat flour
1/2 tsp salt
3/4 cup water (approximately)
Mix flours and salt.
Add water to make dough.
Knead until smooth.
Let rest 10 minutes.
Roll out dough very thin, and cut into noodles, or
shape as desired.
Let dry, or use immediately.
To Use:
Cook in boiling, salted water or broth until
tender.
Serve with sauce of your choice.

Noodles II

2 tsps oil
1/2 cup water (approximately)
Mix flour and salt.
Work in oil.
Add water to make dough.
Knead until smooth.
Cover, and let rest 10 minutes.
Roll out as thin as possible, and cut into
squares, circles, or noodles.
Or, put through pasta machine (dust roller with
flour).
Cook in boiling, salted water until tender.
