Spaghetti Squash Casserole 1 (3 - 4 lb) spaghetti squash Pan spray or cooking oil 1/2 cup chopped onion 2 garlic cloves, peeled and chopped. 1 cup soy sour cream 1/2 tsp salt 1/4 tsp pepper 1/2 cup grated soy cheeze (optional) 1/2 cup seasoned breadcrumbs Poke a few holes into squash, going about halfway. Put squash into a bowl, and bake or microwave until a knife goes in easily. Let cool. Cut squash open. Remove seeds. Remove "spaghetti" strands to a bowl. Set aside. Spray a frying pan with pan spray, or coat with oil. Heat to medium. Add onion to pan, and saute`until onion is soft. Add garlic, and saute` 1 minute. Let cool. To squash in bowl, add onion, sour cream, salt, pepper, and half of the cheeze. Add onion and garlic, and mix well. Put mixture into a sprayed or greased casserole dish. Mix breadcrumbs with remaining cheeze. Top mixture in casserole with with breadcrumb mixture. Cover with foil or lid. Bake at 350 F until heated through. Remove foil for last few minutes to brown top.
