Low-Fat Baking Mix 9 cups sifted flour (unbleached, whole wheat, multigrain, etc) 1/3 cup baking powder 1/4 cup sugar 1 Tbs salt 1 cup solid vegetable shortening (half the amount of regular baking mix) In a large bowl, combine flour,baking powder, and salt. Cut in shortening until the mixture resembles coarse meal. Store mixture in an airtight container. --- Biscuits 2 cups mix 1/2 cup soymilk Put mix in a bowl. Add soymilk, and stir until just mixed. On a floured surface, knead dough lightly 10 - 12 times. Roll out 1/2" thick. Cut into circles or squares. Put biscuits on a cookie sheet. Bake in a pre-heated 400 F oven for 10 - 15 minutes.
