Hey Deb! I'm getting so frustrated! Every time I cook beans lately, they get soft on the outside and even burst open, but the insides are still crunchy and white. What is up with that? I'm trying to make refried beans with pintos right now. I soaked them for 12 hours, replaced water, brought to a boil and then simmered for 1 hour -when I tried one it felt soft, then drained water, mashed the beans with a cup or two of water and have been cooking them (replacing water as they start to dry out) for about 2 hours. They still have little crunchy bits like minced nuts in them. This happens every time I cook beans lately. Actually, I've only really got them right a couple times and I don't feel like I did anything differently. :(
