Vegan Vietnamese Banh Mi Sandwich Vietnamese or French baguette/roll (or a section of French bread) Veg mayo (Vegenaise, Nayo, etc) Vegan pate` (such as http://ep.yimg.com/ca/I/farawayfoods_2076_2021790) Vegan cold cuts (Yves, LightLife, etc), ham-style, chikn, etc (and/or slices of grilled tofu) Cucumber slices Shredded carrot Shredded daikon Jalapeno slices Fresh cilantro sprigs Soy sauce Slice baguette or roll the usual way (long way). Remove some of the inner bread, leaving a trough in both top and bottom part (save removed parts for later use as crumbs, stuffing, etc). If bread is very fresh, toast briefly to firm it up. Spread mayo over the inside of the roll. Spread a portion of pate`inside the roll. Arrange cold cuts over pate`. Top with cucumber, carrot, daikon, jalapeno, and cilantro. Sprinkle on a few drops of soy sauce. Close sandwich, and eat! NOTE: For pickled vegs, soak shredded carrot and daikon in sweet pickle juice for 3 days before using.
