Subject:         pie crust

I am trying to bake an apple pie with a gluten-free pie crust is this possible? I have Bob's Red Mill Rice Flour but it talks about baking a a single pie crust? Will a double crust pie work? I guess I will just experiment. Is anyone out there having issues with simple cooking gluten-free?
