"Chicken" Noodle Soup

1 tsp cornstarch
4 cups vegetarian "chicken" broth*
1/3 cup grated fresh carrot
1/4 lb noodles, cooked and drained
1 cup diced vegetarian "chicken"**
Pinch of garlic powder

Mix cornstarch with 1/4 cup of the broth. Set
aside.
Put remaining broth in a soup pot.
Bring just to boil.
Add carrot, "chicken", and garlic, and mix gently.
Stir in the dissolved cornstarch.
Turn heat down to medium simmer.
Cook, stirring often, until soup is slightly
thickened.
Stir in noodles.
Serve.

*4 cups Imagine brand No-Chicken Broth,
OR
4 cups water + 4 tsps vegan "chicken"
bouillon powder

**Soy "chicken", "chicken"-style seitan,
"chicken"-flavored Tofu, etc
