Hi, Beseder! How are you? Try using 3/4 wheat flour and 1/4 barley flour in your recipes, then gradually use less wheat and more barley. Sub spelt flour for part of the wheat. To make flatbread, roll out balls of risen dough into rounds, and bake until just done.
