For a really impressive dish, heat a package of veggie burgers (like Boca, etc) by simmering them (whole, not crumbled) in gravy, and serving everyone a whole burger (now tender and juicy from being heated in gravy), on top of (or next to) a serving of mashed potatoes and another vegetable. Also great if you use "chikn" patties simmered in "chikn"-style gravy. (As you can tell, I am a fan of meat analogs. If you (or your guests) are not, you could use non-meatlike burgers or patties. Or even tempeh or tofu.)
