Salad
Cup of Broth (optional)
Nut roast
Rolls or bread
Gravy
Steamed broccoli or asparagus
Assorted olives and pickles
Cookies or cake
Coffee, tea, Roma, etc

Nut Roast

2 cups cooked brown rice
3/4 cup walnuts, ground
1/4 cup sunflower seeds, ground
1 cup fresh breadcrumbs
3 Tbs nutritional yeast
2 egg substitutes, beaten
1/2 tsp lemon juice
1 & 1/2 cups diced onions
1/4 tsp salt
1 tsp salt-free seasoning (Vegit, Mrs Dash, etc)
1/2 tsp poultry seasoning or other herb blend

In a large bowl, combine all ingredients.
Pack the mixture into a sprayed or greased loaf
pan.
Dot top with margarine.
Cover with foil.
Bake at 350 F for about 30 - 40 minutes.

Serve with gravy or sauce of your choice.
