Lemon Bars 1/2 cup margarine, softened 1 & 1/3 cups pastry flour 1/4 cup sugar Pan spray 2 Tbs pastry flour 3/4 cup sugar 2 egg substitutes, prepared (Ener-G) 1/4 tsp baking powder 3 & 1/2 Tbs lemon juice Powdered sugar Preheat oven to 325 F. In a bowl, put margarine, 1 & 1/3 cups flour, and 1/4 cup sugar. Mix with a fork until mixture is crumbly. Press into a sprayed, 8"-square pan. Bake for about 10 minutes. Do not let crust brown. Put the rest of the ingredients, except powdered sugar, in a blender, and blend until well-mixed. Pour this mixture over pre-baked crust. Return to oven, and bake an additional 15 - 20 minutes, or until firm. Remove from oven, and sprinkle with powdered sugar. Let bars cool before cutting.
