When subbing one thing for another, the ideal substitute is whatever is closest in taste, texture, etc. In the case of coconut milk, another "nut milk" is best, so almond milk would be my first choice. Hemp milk is not as close, but acceptable. Soymilk is not close at all (in my opinion). Of course, if similar taste is not what you are after, you could use any kind of "milk" (potato milk, etc). --- Haven't tried to make hemp milk from seeds, but if I did, I would use ones without shells.
