I usually just substitute a few dashes of cinnamon and black pepper for the garam masala. It works fine. :) --- If you cook the tempeh in the sauce for at least 20 minutes, there is no need to pre-cook the tempeh. Don't overcook the tempeh, though. It should be cooked through, but still somewhat moist inside. --- Tempeh burgers rock!!! :)
