Here's a recipe to fiddle around with! --- Korma Sauce Adjust spices to your taste... 3 Tbs coconut oil 1 large onion, peeled and chopped 2 cloves garlic, peeled and minced 1 cup light coconut milk 1/2 tsp cumin powder 1/2 tsp turmeric powder 1/4 tsp cayenne powder (or to taste) 1/4 tsp garam masala (buy from Indian market) 1/2 tsp salt (or to taste) 1/4 cup chopped almonds Heat oil in a skillet over medium heat. Add onions, and stir-cook until soft. Add garlic, and stir-cook 1 minute. Put onion and other ingredients into a food processor or blender. Process to a smooth sauce, about the consistency of thick cream. Add a bit of coconut milk or water to thin it if needed. To Use: Put vegetable chunks, tofu, tempeh, etc, into a sprayed baking dish. Spread sauce over. Bake for 20 - 30 minutes, or to desired doneness.
