If you want a butter-like spread,
try Earth Balance or other vegan
margarine/spread. Read labels
carefully. Just because a product
is vegan doesn't always mean it is
healthful.
For topping vegetables, you can use
organic, cold-pressed corn oil, which
has a butter-like flavor.
Euro-style diets use a drizzle of
high-quality olive oil on vegetables
and as a bread spread. If you refrigerate
a small container of olive oil, it will
solidify into a spreadable form.
For a "butter-and-cheese" topping to
use on veges, bread, noodles, etc,
mix some margarine or oil with
nutritional yeast, and use as a
spread and topping.
