hi there! i'm also in a similar situation. i will be helping to provide snacks and goodies for a girls' road trip. we are staying for two and a half days and aren't sure how big the refrigerator is.
some ideas i've come up with so far are....
1. muffins - they usually stay good for a couple days and can be eaten any time of day or night. you can also make them as healthy or delicious as possible.
2. mixed nuts - i plan on doing a batch of spiced nuts and/or mixture so we have snack food whenever and it is a break from chips. it also is a good source of protein.
3. chex mix snack mix - you can get recipes on the back of the bag and now-a-days they have like 5 recipes!
if you are looking more for meals, sorry i didn't come up with any yet :(
as inspiration: i think - what is in my cabinet that is opened and can still be eaten (peanut butter, nuts, pretzels, etc and what can i make from these items) also i think of things that have sat out on my kitchen counter for a couple of days and stayed fresh.
