Instant Sooji 1 cup Quick Cream of Wheat 1/8 tsp dried onion powder Pinch of ground dried chilies 1/8 tsp ginger powder 1/8 tsp cumin powder Pinch of dry mustard powder 1 curry leaf, dried 1 Tbs finely chopped cashew nuts Pinch of salt 2 cups water 1 tsp ghee (vanaspati or other) In a hot, dry frying pan, toast Cream of Wheat, stirring constantly, until slightly golden and aromatic. Remove from pan and set aside in a bowl. In same frying pan, put onion powder, chilies, ginger, cumin, mustard, curry leaf, nuts, and salt. Pan-toast briefly, then add to Cream of Wheat. When mixture is completely cool, put it into a ziplock bag or a jar. Mix well. To Serve: Put mixture into a pot with 2 cups water and 1 tsp ghee. Cook, stirring constantly, about 2 - 3 minutes, or until desired thickness. Serve, with or without pickle. NOTE: Adjust the spices to taste.
