Subject:         Eggless Oatmeal Cookie recipes

Oatmeal Cookies I

1/3 cup margarine
1 cup sugar
1/2 cup applesauce
1 tsp vanilla or almond extract
1 & 1/2 cups pastry flour
1 & 1/4 cups rolled oats
1/2 tsp baking soda
1/4 tsp salt
1/2 cup raisins or chocolate chips

Cream margarine and sugar together.
Mix in applesauce and vanilla.
Mix together the flour, oats, and baking soda.
Add to the sugar mixture.
Stir in raisins or chips.
Drop spoonfuls onto a greased cookie sheet.
Bake at 350 F for 12 - 14 minutes.
Do not overcook.

Oatmeal Cookies II

1 & 3/4 cups quick oats
1 & 1/2 cups all-purpose flour
1 cup margarine, softened*
3/4 cup white sugar
3/4 cup brown sugar
1 tsp cinnamon
1 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 egg substitute, beaten
1 cup raisins or chocolate chips

Preheat oven to 350 F.
Mix all ingredients except raisins or chips in a
large bowl.
Beat gently until just mixed.
Beat harder for 2 minutes.
Stir in raisins or chips.
Drop dough by heaping teaspoonfuls onto greased
cookie sheets, about 2" apart.
Bake 8 - 12 minutes, until cookies are lightly
browned around edges.
Cool cookies on wire racks.


*Low-Fat Version:
Substitute Lighter Bake or applesauce for 1/2 of
the margarine.

1 cup raisins or chocolate chips, or half each

Cream margarine and sugar together.
Mix in applesauce and vanilla.
Mix together the flour, oats, and baking soda.
Add to the sugar mixture.
Stir in raisins, chocolate chips, etc.
Drop spoonfuls onto a greased cookie sheet.
Bake at 350 F for 8 - 12 minutes.
Do not overcook.

Oatmeal Cookies (No Wheat)

3/4 cup margarine
2 cups sugar
1 cup applesauce
1 tsp vanilla
2 & 1/2 cups rolled oats
2 cups barley flour or rye flour
3/4 cup soy flour
1 tsp baking soda
3/4 tsp salt
1 cup raisins or chocolate chips (optional)

Cream margarine and sugar together.
Mix in applesauce and vanilla.
Mix together the oats, flour, and baking soda.
Add to the sugar mixture.
Stir in raisins or chocolate chips, if desired.
Drop spoonfuls onto a greased cookie sheet.
Bake at 350 F for 8 - 12 minutes.
Do not overcook.
