Found this recipe years ago for my newly-Vegan Mom. It's her all-time favorite. Creamy, so not consistency of egg-salad, but definately a good substitution!! I especially like it on the Rye Crisps! One note - Deb, I apologize if it's your recipe. Most likely is because this was the main site I visited back then. But wasn't so good at putting authors in my notes as I am now. __________________________________________________ Avocado-Tofu Dream Spread 8 ounces firm tofu, well drained (we prefer tub variety, not silken for a little more texture) Mash the tofu and avocado together in a medium bowl until smooth, or a coarser texture if desired. Stir in dill, garlic, salt, soy sauce, mayo, lemon juice, bell peppers, onions and sun-dried tomatoes. Serve on a hearty bread, topped with spinach leaves. |
