Found this recipe years ago for my newly-Vegan Mom. It's her all-time favorite. Creamy, so not consistency of egg-salad, but definately a good substitution!! I especially like it on the Rye Crisps!

One note - Deb, I apologize if it's your recipe. Most likely is because this was the main site I visited back then. But wasn't so good at putting authors in my notes as I am now.

Avocado-Tofu Dream Spread

8 ounces firm tofu, well drained (we prefer tub variety, not silken for a little more texture)
1 medium avocado, peeled and chopped
1 tablespoon fresh dill, minced
1 clove garlic, minced
1/8 teaspoon salt
2 teaspoons soy sauce
2 tablespoons mayonnaise (you choice of variety)
1 tablespoon lemon juice
1/3 cup red bell pepper, chopped
1/3 cup red onion, chopped (or vidalia onion)
5 sun-dried tomatoes, minced

Mash the tofu and avocado together in a medium bowl until smooth, or a coarser texture if desired.

Stir in dill, garlic, salt, soy sauce, mayo, lemon juice, bell peppers, onions and sun-dried tomatoes.

Serve on a hearty bread, topped with spinach leaves.
Or good served on crackers.
