I found a recipe for seitan breakfast patties that I like because it is nearly soy- free, simple, and tasty. It calls for vital wheat gluten, garbanzo flour, mashed beans, seasonings and liquid. While the patties are pretty good, I'd like them to be a little less bread-like and more meaty. Which ingredients should I play with to achieve that? Thanks.
