Many recipes can be made salt-free by just omitting salt, and, if desired, using a sub (below). Salt subs: Lemon juice, flavored vinegars, Mrs. Dash, Salt-Free Spike and Vegit.
--- Oil sub for use in salad dressings: 1/4 tsp xanthan gum or guar gum 1/4 cup warm water 3/4 cup room temperature water Put xanthan gum or guar gum in a blender or processor. Add warm water. Blend until gum is dissolved. Add room temperature water. Blend until smooth. Add remaining dressing ingredients of your choice. Blend until smooth.
