Depends on the recipe.

For salad dressings, use any vinegar.
Balsamic is especially nice for these.


For baking, use white vinegar.


For souring soymilk, etc, use white vinegar
or lemon juice.


Lemon juice is a reasonable substitute
for vinegar in many recipes.


Try coconut vinegar as a sub for other vinegars.
Find it in Asian markets.
