Depends on the recipe. For salad dressings, use any vinegar. Balsamic is especially nice for these. --- For baking, use white vinegar. --- For souring soymilk, etc, use white vinegar or lemon juice. --- Lemon juice is a reasonable substitute for vinegar in many recipes. --- Try coconut vinegar as a sub for other vinegars. Find it in Asian markets.
