Subject:         low-heat yogurt recipes

Does anyone what temperature you can heat milk to without heating to 180 degrees for making yogurt. I just read that heating it to 145-150 for 30 minutes changes the structure of the milk, so I would like to make the yogurt without heating it so high. Any help would be great.
