Vegetable Frittata

2 Tbs vegetable oil
3/4 cup bell pepper, diced
3/4 cup diced mushrooms
1/2 cup diced zucchini
3/4 cup diced onion
1/4 cup soymilk
Ener-G Egg Replacer for 6 eggs, prepared as per
package directions
8 oz firm silken Tofu, whipped until creamy
2 Tbs nutritional yeast
1 8-oz pkg Better Than Cream Cheese, softened
2 cups bread cubes
6 oz cheddar cheeze, shredded (soy)
1 tsp salt
1/2 tsp garlic powder
1/4 tsp fresh ground pepper

Preheat oven to 350 F.
Generously grease a quiche pan or 9" springform
pan.
Heat oil in a large frying pan.
Add bell pepper, mushrooms, zucchini, and onion.
Saute` until tender. Drain.
Transfer sauteed vegetables to a large bowl.
In another bowl, beat soymilk, Ener-G, Tofu,
nutritional yeast, and BTCC until smooth.
Add Tofu mixture to vegetable mixture. Stir to
combine.
Add bread, cheeze, salt, garlic powder, and
pepper. Combine well.
Pour into prepared pan.
Bake 40 minutes or longer, until set.
Cool 10 - 20 minutes.
Serve.
