The Great White Cake

1 & 1/2 cups flour
3/4 cup sugar
2 tsps baking powder
1/4 tsp salt
3/4 cup soymilk or other 'milk
2 tsps vanilla
1/4 cup melted margarine or oil
Ener-G Egg Replacer for 1 egg, prepared as per
package directions*

Preheat oven to 350 F.
Grease a 9" x 9" cake pan.
In large bowl, mix together flour, sugar, baking
powder, and salt.
Combine remaining ingredients, and add to flour
mixture.
Beat by hand for 1 minute.
Bake for 30 minutes, or until a toothpick inserted
in center of cake
comes out dry.

Makes one cake layer.

Multiply amounts as needed!


*If Ener-G is not available,
use 2 tsps tapioca flour, soy flour, or
cornstarch, mixed with 2 Tbs water

Cupcakes

Put batter into greased cupcake pans.
Bake 20 minutes, or until a toothpick inserted in
center of a cupcake
comes out dry.

VARIATIONS:

Yellow Cake

Add 3 - 5 drops yellow food coloring to batter.

Lemon Cake

Use 1 & 1/2 tsps lemon extract and 1/2 tsp
vanilla.
Add 1 tsp grated lemon zest (yellow part of lemon
peel).

Frost with lemon frosting or vanilla frosting.

Orange Cake

Use 1 & 1/2 tsps orange extract and 1/2 tsp
vanilla.
Add 1 tsp grated orange zest (orange part of
orange peel).

Frost with orange frosting or vanilla frosting.

Chocolate Cake

To dry ingredients, add 1/3 cup + 1 Tbs cocoa
powder (sift before adding).

Frost with chocolate frosting.

Mocha Cake

To dry ingredients, add 1/3 cup cocoa powder
and 1 Tbs instant coffee powder (sift both before
adding).

Frost with vanilla frosting or chocolate frosting.

Frosting

1/3 cup soy margarine, room temperature
1 - 2 tsp vanilla or almond extract (or other
flavor)
Small pinch of salt
1 lb confectioner's (powdered) sugar (more, if
needed)

In a large bowl, cream the margarine until fluffy.
Mix in the vanilla and salt.
Add the sugar gradually, to desired consistency.
Beat until smooth.
Use immediately.

Powdered Sugar

Using a coffee bean grinder or another type of
food mill,
grind natural sugar (Florida Crystals recommended)
into a fine powder.
Do this a little bit at a time for best results.

To each cupful of powdered sugar you get,
add about 1/4 tsp cornstarch or arrowroot.
Mix very well to distribute the starch.

Store in an airtight container.

Orange Frosting & Filling

1/3 cup margarine, room temperature
1 lb confectioner's (powdered) sugar
1/4 tsp salt
2 - 4 Tbs soymilk (as needed)
1 - 2 tsp orange extract (to taste)

In a large bowl, cream the margarine until fluffy.
Mix in the sugar and salt.
Mix in the extract.
Add the soymilk gradually, to desired consistency.

Beat until smooth, adding more soy milk if needed.

Use immediately.

Lemon Frosting & Filling

Use lemon extract.
