Oat flour works well with most other
flours when making cookies. If you
use ALL oat flour they might be gluey,
but why not use half oat flour and
half millet flour? Or half another
flour of your choice. Corn flour
(fine cornmeal) works well too.

Xanthan gum and guar gum don't need
to be heated in an ice cream mix.

Just prepare your other ingredients,
then let the mixture cool somewhat,
and blend in the xanthan gum with
a stick blender or beaters.
