Subject:         Oat flour, Xantham gum

Do you think oat flour would work to replace the wheat flour in oatmeal cookies? Or would they be too gluey? What about other cookies? I just made strawberry rhubarb crisp with a little oat flour to hold it together, and it was gluey but I kinda liked it. lol

If I'm making ice cream that I have to bring to a boil, what step do you think I should add the xanthan gum? Blend it with the creamer before heating? I got little globs when I tried to just add it into the hot ingredients :(
