Caramel Syrup

2 Tbs margarine
1/2 cup brown sugar
1 cup creamer or double-strength soymilk
1 tsp vanilla extract

Melt the margarine in a small saucepan over medium
heat.
Stir in the sugar and creamer.
Bring to a boil, stirring constantly, until the
sugar is dissolved.
Reduce heat, and simmer for 2 minutes.
Remove from heat, and stir in the vanilla.
Cool.
Store in jar in fridge.
Stir well before each use.


Drizzle caramel syrup over ice cream.
Add caramel syrup to taste to hot coffee. Add
soymilk to taste.

Caramel Candy

2 cups sugar
2 cups brown sugar
2 cups corn syrup
1 & 1/2 cups Silk Creamer
3/4 cup margarine
1 tsp vanilla

Put all ingredients into a saucepan.
Bring to a boil, and boil until it reaches
soft ball stage - 234 F (Use a candy thermometer).
Remove from heat, and stir in vanilla.
Pour mixture into a greased pan.
Cut into squares when cool.
Wrap each piece in candy wrapper or wax paper.
